  • 1 teaspoon chili powder

  • 1/2 teaspoon Italian blend seasoning (or make your own with dried basil, dried thyme, dried oregano)

Mango Salsa

  • 2 mangoes
  • 1/2 red or white onion, diced
  • 1 red bell pepper, diced
  • 1 bunch cilantro, chopped
  • 1/4 teaspoon salt
  • juice of 1 lime

Instructions

  1. Prepare the Mango Salsa: In a medium bowl, stir together diced mangoes, diced onion, diced red bell pepper, chopped cilantro, salt, and lime juice. Mix well and set aside to allow flavors to meld.
  2. Season the Chicken: Drizzle the chicken breasts with olive oil and season them with salt and pepper to taste. In a separate small bowl, combine cumin, chili powder, garlic powder, and Italian blend seasoning. Rub this spice mixture evenly over both sides of the chicken breasts.
  3. Cook the Chicken: Grill the chicken over medium-high heat until cooked through, about 6-8 minutes per side depending on thickness. Alternatively, bake the chicken in a preheated oven at 375 degrees Fahrenheit for 20 minutes or until the internal temperature reaches 165°F and the chicken is fully cooked.
