Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside to prevent sticking and ensure even baking.
  2. Mix Dough: In a large bowl, combine the vanilla cake mix, vegetable oil, eggs, and vanilla extract. Add green gel food coloring and mix thoroughly until the color is evenly distributed throughout the dough.
  3. Chill Dough: Place the dough in the refrigerator for 20 minutes. This step firms up the dough, making it easier to handle and enhancing flavor blending—do not skip this step.
  4. Preheat Oven & Prepare Coating: Preheat your oven to 350 degrees Fahrenheit. In a small bowl, mix together the confectioners sugar and cornstarch to prepare the coating.
  5. Form Cookies: Remove the chilled dough from the refrigerator. Scoop the dough into balls (using a cookie scoop is recommended for uniform size) and roll each ball thoroughly in the confectioners sugar mixture until fully coated.
  6. Shape Cookies: Place the coated dough balls onto the prepared baking sheet. Gently press down the top of each ball with the bottom of a glass to slightly flatten them, taking care not to press too hard.
