Description

Buckeyes Candy Recipe is a classic, no-bake treat featuring creamy peanut butter and cream cheese centers dipped in rich dark chocolate. Perfectly sweet, smooth, and easy to make, these delicious candies are ideal for holiday gifts or anytime indulgence.

Ingredients

Scale

Peanut Butter Filling

  • ½ cup creamy peanut butter
  • 4 ounce cream cheese softened (½ 8-ounce package)
  • ½ tsp vanilla extract
  • ½ tsp salt
  • 2 cups powdered sugar

Chocolate Coating

  • 1½ cups dark chocolate chips
  • 1 tbsp vegetable oil

Instructions

  1. Mix Filling: Use a stand or hand mixer to blend the peanut butter, cream cheese, vanilla, and salt in a medium-sized mixing bowl until fully combined and fluffy, about 3-5 minutes.
  2. Add Sugar: Gradually beat in the powdered sugar, scraping down the sides of the bowl with a spatula as needed until you have a light, tan, soft dough.
  3. Prepare Baking Sheet: Cover a baking sheet with parchment paper to hold the Buckeyes while shaping and chilling.
  4. Form Balls: Roll the dough into 1-inch balls and place them on the prepared cookie sheet. The dough will be slightly soft but should hold shape.
  5. Insert Toothpicks and Freeze: Insert a toothpick into the top of each ball and freeze them for 20 minutes to firm up.
  6. Prepare Second Baking Sheet: Line another baking sheet with parchment paper for the dipped Buckeyes.
  7. Melt Chocolate: Melt the dark chocolate chips and vegetable oil together in a shallow bowl in the microwave in 20-second increments, stirring each time, until smooth and fully melted, about 1-2 minutes total.
  8. Dip Buckeyes: Remove about 6 Buckeyes from the freezer and dip each one into the melted chocolate using the toothpick, swirling to coat all but a small circle of the peanut butter filling. Let excess chocolate drip off, then place on the second baking sheet.
  9. Repeat Dipping: Continue dipping Buckeyes in batches of 6 until all are coated in chocolate.
  10. Remove Toothpicks: Gently remove the toothpicks from the tops and smooth over the holes using a toothpick, offset spatula, or your finger.
  11. Freeze Until Set: Return the Buckeyes to the freezer for up to 1 hour until the chocolate is set.
  12. Store: Transfer the Buckeyes to a covered container and refrigerate until ready to serve.
  13. Serve: Buckeyes can be enjoyed straight from the refrigerator or at room temperature.

Notes

  • Store Buckeyes in an airtight container in the refrigerator for up to 2 weeks to keep them fresh.
  • Freeze Buckeyes for up to 2 months; thaw overnight in the refrigerator before serving.
  • Use parchment paper to prevent sticking during shaping and chocolate coating.
  • For a smoother chocolate coating, ensure chocolate and oil are fully melted and stirred well.
  • If desired, use peanut butter alternatives such as almond butter for a different flavor.
