Description

This rich and fudgy Chocolate Cobbler is a delightful dessert featuring a cakey top with a luxurious chocolate pudding bottom. It’s easy to prepare with simple pantry ingredients and perfect to serve warm with ice cream for a comforting treat.

Ingredients

Scale

Batter:

  • 1 cup flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup sugar
  • 1 1/2 tablespoons cocoa powder
  • 2 tablespoons butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts, optional

Topping:

  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 2 tablespoons cocoa powder
  • 1 cup boiling water

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the cobbler.
  2. Mix the Batter: In a medium-sized bowl, combine the flour, baking powder, salt, sugar, and cocoa powder. Stir in the melted butter, milk, and vanilla extract until just combined. Fold in the chopped walnuts if using.
  3. Prepare the Baking Dish: Grease a 1.5-quart casserole dish or equivalent square pan. Spread the batter evenly into the dish.
  4. Add the Topping: In a separate bowl, mix the sugar, brown sugar, salt, and cocoa powder for the topping. Sprinkle this dry mixture evenly over the batter in the dish. Do not stir.
  5. Pour Boiling Water: Carefully pour the boiling water over the dry topping mixture. Do not stir. This will create the pudding layer as it bakes.
  6. Bake the Cobbler: Place the casserole in the preheated oven and bake for 30 minutes or until the top is almost set and the cake has risen to the top with pudding forming underneath.
  7. Serve: Remove from oven and serve warm, ideally with a scoop of ice cream to complement the chocolate cobbler.

Notes

  • Make a Double Batch: This recipe doubles well in a 9×13-inch casserole dish for larger gatherings.
  • Keep it Fudgy: Avoid baking longer than 30 minutes to maintain a rich and fudgy pudding bottom.
  • Walnut Substitute: You can omit the walnuts or replace them with other nuts like pecans or almonds for different textures.
  • Vanilla Extract: Use pure vanilla extract for best flavor.
  • Serving Suggestion: Serve warm with vanilla ice cream or whipped cream for an extra indulgent dessert.
