Description

Instructions

  1. Cook bacon and chicken: If not already cooked, cook 1 pound of bacon until crispy and crumble it. Cook 1 pound of chicken fully and dice it into bite-sized pieces.
  2. Preheat oven and prepare dish: Preheat your oven to 350ºF and spray a 9×13 inch casserole dish with cooking spray to prevent sticking.
  3. Make creamy mixture: In a large bowl, combine 10.5 ounces of cream of chicken soup, 1/2 cup sour cream, 8 ounces of cream cheese (at room temperature), 1 cup of shredded Colby jack cheese, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Mix until smooth.
  4. Add veggies and meat: Stir in 1 cup mixed vegetables (drained), diced chicken, 1/4 cup chopped green onions, and all but 1/2 cup of the crumbled bacon into the creamy mixture until evenly combined.
  5. Assemble casserole: Spread the mixture evenly into the prepared casserole dish. Top the mixture evenly with 32 ounces of frozen tater tots.
  6. Bake the casserole: Bake in the preheated oven for 45 minutes until the tater tots are golden brown and crisp.
