Instructions
- Cook bacon and chicken: If not already cooked, cook 1 pound of bacon until crispy and crumble it. Cook 1 pound of chicken fully and dice it into bite-sized pieces.
- Preheat oven and prepare dish: Preheat your oven to 350ºF and spray a 9×13 inch casserole dish with cooking spray to prevent sticking.
- Make creamy mixture: In a large bowl, combine 10.5 ounces of cream of chicken soup, 1/2 cup sour cream, 8 ounces of cream cheese (at room temperature), 1 cup of shredded Colby jack cheese, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Mix until smooth.
- Add veggies and meat: Stir in 1 cup mixed vegetables (drained), diced chicken, 1/4 cup chopped green onions, and all but 1/2 cup of the crumbled bacon into the creamy mixture until evenly combined.
- Assemble casserole: Spread the mixture evenly into the prepared casserole dish. Top the mixture evenly with 32 ounces of frozen tater tots.
- Bake the casserole: Bake in the preheated oven for 45 minutes until the tater tots are golden brown and crisp.
- Add final toppings and melt cheese: Remove from the oven and sprinkle the remaining 1/2 cup shredded cheese and 1/2 cup crumbled bacon over the top. Return to the oven and bake for an additional 5 minutes until the cheese has melted.
- Serve: Let the casserole cool slightly and serve immediately for a warm, comforting meal.
