Ingredients

Units Scale

Crust

  • 60 Nilla Wafers
  • 5 tablespoons (71g) unsalted butter, melted
  • 1/2 teaspoon salt

Filling and Topping

  • 1/2 cup (118ml) sweetened condensed milk
  • 1/2 teaspoon cinnamon
  • 1 large Granny Smith apple, peeled, cored, and diced (a heaping 1 cup)
  • 2 cups (340g) white chocolate chips
  • 20 Rolos unwrapped (or other chocolate caramel candy)
  • 1/2 cup (60g) pecans, chopped

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×9-inch square baking pan with foil and spray it with cooking spray to ensure easy removal of the bars once baked.
  2. Make the Crust: Using a food processor, finely grind the Nilla Wafers into crumbs. In a bowl, mix these crumbs with the melted butter and salt until combined evenly. Press the mixture firmly into the bottom of the prepared pan to form a crust layer. Bake this crust for 5 minutes to set.
  3. Mix Sweetened Condensed Milk and Cinnamon: While the crust bakes, stir together the sweetened condensed milk and cinnamon in a small bowl or measuring cup until well combined.
  4. Assemble the Layers: Once the crust is hot from baking, evenly sprinkle the diced Granny Smith apples, unwrapped Rolos, chopped pecans, and white chocolate chips over the crust’s surface to create layered texture and flavor.
  5. Pour Topping and Bake: Pour the cinnamon-spiced sweetened condensed milk evenly over the layered ingredients. Return the pan to the oven and bake for 21-24 minutes, or until the edges are golden and bubbling.
  6. Cool and Serve: Allow the bars to cool completely in the pan to set firmly. Use the foil to lift them out for easy cutting into bars. Serve and enjoy!

Notes

  • Store in an airtight container at room temperature for up to 3 days to maintain freshness.
  • You can freeze the bars in a single layer for up to 1 month—thaw before serving.
  • For a different crust, substitute the Nilla Wafers with a graham cracker crust.
  • Swap white chocolate chips with milk or semi-sweet chocolate chips for a different chocolate flavor profile.
  • Any caramel candy can replace Rolos if preferred, ensuring the caramel flavor remains rich and delicious.
