Puff Pastry

Almond Filling
- 1/4 cup butter, softened
- 1/3 cup sugar

- 1 egg yolk
- 1/4 teaspoon almond extract
Topping and Glaze

- 1 teaspoon water
- 1/4 cup sliced almonds

Instructions
- Preheat Oven: Preheat the oven to 400℉ and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Thaw Pastry: Remove the sheet of puff pastry from the freezer and let it thaw slightly on the counter while you prepare the almond filling.
- Make Almond Filling: In a mixing bowl, combine the softened butter, sugar, almond flour, egg yolk, and almond extract until smooth and creamy.
- Prepare Filling Bag: Transfer the almond filling into a resealable plastic bag, seal it tightly, and set it aside for piping.
- Cut Pastry Squares: Place the puff pastry on a clean surface, open it to a square shape, and cut it into 9 even squares. Transfer these squares to the prepared baking sheet.
- Score Pastry Borders: Using a small sharp knife, gently score a smaller square inside each square about 1 centimeter from the edges to form a border without cutting all the way through.
- Fill Pastries: Snip off a corner of the baggie with almond filling and carefully pipe the filling into the inner squares of each puff pastry piece.
