Description

This Almond Puff Pastry recipe creates delicate, flaky pastries filled with a rich almond butter filling, topped with sliced almonds and a dusting of powdered sugar. Perfect as a sweet snack or elegant dessert, these pastries bake to a golden puffed perfection in just 12 minutes.

Ingredients

Scale

Puff Pastry

  • 1 sheet puff pastry

Almond Filling

  • 1/4 cup butter, softened
  • 1/3 cup sugar
  • 1/2 cup almond flour
  • 1 egg yolk
  • 1/4 teaspoon almond extract

Topping and Glaze

  • 1 egg white
  • 1 teaspoon water
  • 1/4 cup sliced almonds
  • powdered sugar, for dusting

Instructions

  1. Preheat Oven: Preheat the oven to 400℉ and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Thaw Pastry: Remove the sheet of puff pastry from the freezer and let it thaw slightly on the counter while you prepare the almond filling.
  3. Make Almond Filling: In a mixing bowl, combine the softened butter, sugar, almond flour, egg yolk, and almond extract until smooth and creamy.
  4. Prepare Filling Bag: Transfer the almond filling into a resealable plastic bag, seal it tightly, and set it aside for piping.
  5. Cut Pastry Squares: Place the puff pastry on a clean surface, open it to a square shape, and cut it into 9 even squares. Transfer these squares to the prepared baking sheet.
  6. Score Pastry Borders: Using a small sharp knife, gently score a smaller square inside each square about 1 centimeter from the edges to form a border without cutting all the way through.
  7. Fill Pastries: Snip off a corner of the baggie with almond filling and carefully pipe the filling into the inner squares of each puff pastry piece.
  8. Brush Edges: Whisk together the egg white and water, then brush this mixture onto the outer borders of each puff pastry square to help with browning and shine.
  9. Add Almonds: Sprinkle sliced almonds evenly over the top of each pastry to add crunch and flavor.
  10. Bake: Bake the pastries in the preheated oven for 15 minutes or until they are golden brown and have puffed up nicely.
  11. Dust with Powdered Sugar: Remove from the oven and dust the pastries lightly with powdered sugar for a sweet finishing touch.
  12. Serve: Allow pastries to cool slightly and serve warm or at room temperature for the best flavor and texture.

Notes

  • Store pastries at room temperature for up to 3 days in an airtight container.
  • Reheat pastries in the microwave, toaster oven, or regular oven until warm and crisp before serving.
  • These almond puff pastries can be frozen either before or after baking for convenience.
